Here's another great recipe from our chef Floyd the Food Guy. In this edition Floyd shares his recipe that will give green beans a unique flavor.
Green Bean Provencal
Serves 2-4
INGREDIENTS:
1/2 lb. fresh green beans, stem end snipped off
1 T. olive oil
1 T. butter
1 small tomato, diced
1 clove garlic, crushed
salt and pepper
1 T. chopped parsley
PROCEDURE:
Cook the prepared beans in boiling chicken stock for just 8-9 minutes. Taste them to be sure they're as tender as you like them. Then, drain the stock from the pot. Retain the stock, freeze it and
use it in a soup later on. While the pot is still hot, add the remaining
ingredients, toss it all together and simmer over a low flame for a couple of minutes to incorporate the flavors. Serve hot from the stove.
HINTS:
Mix yellow and green beans for even greater flavor.
