-Mash and prepare sweet potatoes as you normally would for sweet potato casserole (no marshmallow yet)

-Let cool. (cool enough to handle)

-Get a bag of oranges and cut them in half.

-Scoop out the orange meet so there’s just the peel left, intact. (I usually juice the orange and them scoop out the meat so we have fresh orange juice for the next morning)

-Spoon the sweet potato into the orange half, arrange them in a muffin tin or a baking dish so they stay up right.

-Pop them in the over at 350, put marshmallows on top. Leave in until the marshmallows melt and crisp.

 

This is one of my favorites because the orange taste isn’t overbearing and everyone gets their own little orange sweet potato casserole!
