A well-known Brooksville restaurant that was destroyed by fire is quickly taking shape again.

Crews are busy rebuilding Papa Joe's Italian Restaurant, and owner Joe Giarratana couldn't be happier.

"It's going to get done and we'll have a new chapter in our life," he said.

All the noise and commotion is like music to Joe's ears.

"It's a beautiful sound," he said.

The restaurant that has been around for 33 years went up in flames last January. It was a huge blow for Giarratana and his family. Getting everything in place to rebuild has taken a while and Giarratana says it has been stressful.

"We still wake up around three o'clock in the morning tossing around a little bit," he said.

Construction started a month ago and things are moving fast. The plan is to have the restaurant open by the beginning of March.

Giarratana said there are only going to be a few minor changes to the restaurant, but they won't be too big. He said he can't wait for opening day.

"There will be a lot of tears," he said. "A lot of tears, lots of emotions."

Giarratana said after Thanksgiving he will start the hiring process. He says he's looking for around 45 employees.
