A Pinellas County teenager is pushing the school district to offer lunch options for vegans and vegetarians.

Delaney Johnson's typical meal at home includes rice and beans, quinoa, soy and soy meat products like seitan, but when the Palm Harbor University High freshman is at school, it's a far different menu.

"Just chips, water and fruit snacks," she said.

That's why Johnson is gathering signatures for an online petition asking the school district to expand menu options for students like her, who do not eat animal products.

"Adding more options won't just help vegans and vegetarians," she said. "It'll also help people who don't eat meat have a healthier lunch."

Johnson is a vegan, and she says the lunch options at school are lacking for her. Once more than 1,000 people sign her petition, she said she plans to take the petition to the Pinellas County School Board.

Johnson's mother just learned about the effort a couple of days ago. Lisa Johnson, who eats meat, is impressed, but she said she's not surprised.

"She's changed the way we do things in the house, the way the food is, how much fruit has to be in the house at one time," Lisa Johnson said.

Registered dietitian Sarah Krieger is a big proponent of Johnson's request for more vegan options.

"It teaches them to how to eat as a healthy adult if they eat them as a kid," said Krieger, who is also a mother of three.

But will the school board go along with Johnson's request? That remains to be seen.
