Who knew there was an Irish take on traditional meatloaf?

Thanks to Chef Adam Walkover of Liam Fitzpatrick's Irish Restaurant & Pub in Lake Mary, the texture and flavor components of his 'loaf are surprising, unexpected, and deliciously effective.

And watching him build it, it was almost like the "King Cake" of the meatloaf world.

"Absolutely!" Chef smiled. "Absolutely."

The reason is because of what's inside. Chef lines up hard-boiled eggs - with exposed yolks - and "hides" them in the meat. After baking and the loaf is sliced, you get a beautiful "egg-y" cross-section.

TIP: The eggs are slippery, so before placing them inside of the meat, Chef cuts little grooves into the whites and coats the eggs lightly with flour.

"When they roast, they'll actually stick," he said.

Once out of the oven, Chef glazes it with a Guinness BBQ sauce and bakes again for 10 minutes. He then sears the meatloaf on the stove to create a desireable crunch for "texture differentiation."

Liam’s Fitzpatrick’s “Guinness BBQ Meatloaf”

Ingredients:

• 2 lbs Ground beef
• 1/2 Cup fine chopped yellow onion
• 1/2 Cup Ketchup
• 1 Tablespoon of Season Salt
• 1 Teaspoon of Worcestershire
• 1/2 Teaspoon of Tabasco
• 2 Whole Eggs
• 1 Cup of Panko Bread Crumbs
• 1/2 Cup Guinness BBQ Sauce
• About 7 Hard-boiled Eggs (ends of whites sliced off so yolks show throughout slices)

Procedure:

1. Preheat oven to 350 degrees.
2. Mix all ingredients together except BBQ sauce and hard boiled egg.
3. Once ingredients are thoroughly mixed split mix in half.
4. Add first half of mix into non-stick 5x9 baking pan.
5. Place hard-boiled eggs end to down the middle of the meat in pan and gently push down into meat.
6. Place other half of meatloaf mix on top and gently pat down to insure meat is tight.
7. Bake at 350 degrees for about 50 minutes.
8. Once It's done cooking glaze top of meatloaf with BBQ sauce and continue cooking for 10-15 minutes.
9. Remove from oven and let set for 10 minutes.
10. Gently remove from pan, slice and serve.
