If you have a sweet tooth, you’re about to experience a sugar overdose.

The Americas Cake Fair is happening for the second time ever. The Orange County Convention Center is now jam-packed with stage presentations, the Sugar Art Fashion Show, cake competitions, more than 75 hands-on classes and probably more cake samples than you can stomach.

"And, not only that,” said Emily Ellyn, “There are Food Network stars, like [playfully references herself]. But talent aside, Cake Boss Buddy Valastro!”

Ellyn is this year’s host, bringing her “retro rad” wit, style and culinary obsession to the nearly 10,000 expected attendees.

"There's a chocolate area!” she screamed, immeasurably excited. “There's so much to do. SO much cake to eat!"

The Cake Fair’s centerpiece is a show cake designed by Mercedes Strachwsky. It’s a huge coral reef made of fondant (an edible “playdough’), so every detail you see you could technically eat.

She started working on the show cake the day Hurricane Irma struck.

"I worked until the electricity went off,” she said. “Every time I come home, I work into the night."

She pointed out where she used the tip of a pen to create some of the texture.

"And like this one [detail], I use a garlic presser,” she revealed. “ You could not even imagine what I use.”

Visitors can find Strachwsky in the “Ask Mercedes” area of the showroom.

The Americas Cake Fair runs through Sunday.
