ORLANDO, Fla. — Here’s how to make Terralina Crafted Italian's seafood cannelloni, courtesy of Chef Justin Plank.

Ingredients:

  • 4 fresh pasta sheets
  • 4 oz. salmon diced
  • 4 oz. white fish diced
  • 3 oz. baby shrimp
  • 3 oz. baby scallops
  • 6 oz. mascarpone cheese
  • 2 oz. panko bread crumbs
  • 3 oz. shredded mozzarella cheese
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • 1 lemon (zest and the juice)
  • 1/2 cup heavy cream
  • 2 cups of lobster bisque (you can get at your local seafood market)

Directions:

  1. In a bowl, combine salmon, whitefish, shrimp, scallops, herbs, lemon zest, and juice with mascarpone and cream. Season with salt and pepper.

  2. Lay out 4 pasta sheets and divide seafood mixture between the sheets and roll into little rectanglular tubes, sealing the ends shut.

  3. Place in casserole dish with 1/4 cup of water and bake for 20 minutes at 350 degrees.

  4. Remove the dish from the oven and pour the lobster bisque onto the cannelloni and top with mozzarella cheese and panko.

  5. Return the casserole dish into the oven at 425 degrees and bake for 10 minutes.
