Workers at a Brevard County health food store are trying to set a world food record, while at the same time helping to feed the hungry this holiday season.

Workers at Nature’s Market on Apollo Boulevard are putting together the world's largest kale salad.

The employees have been at it for the past couple of days, putting the leaves into salad form.

Saturday, they will dump the salad into an inflatable swimming pool.

When complete, the salad will weigh nearly 600 pounds, not including the dressing.

Since there's no category for largest kale salad, the group will automatically set the record.

“We thought since we were a health foods store, we shouldn't make the world's biggest doughnut,” said Richard Hendry, the market’s owner. “And our kale salad is so popular, we thought for once we would make it so we wouldn't run out in a day.”

They are selling plates of salad for $1 or a pound for $5. Proceeds go to Melbourne's Daily Bread food pantry.

Any leftover salad will be donated to the charity too.

The event runs until 5 p.m.
