Job requirements for working on "Waitress," the musical taking the stage at the Straz Center through April 29?

Singing.

Dancing.

Making pies.

In the world of Joe's Pie Diner, the characters go through dramatic life changes. There is a wedding, a baby on the way, a bad husband and an affair — two, actually.

From the fruits of romantic pursuits to the forbidden ones — let’s introduce some of the stars.

There’s Pineapple Upside Down Pie, Life's Just Peachy Peachy Keen Pie, and In the Dark Dark Chocolate Pie.

Yes, the pies are stars.

“This is sort of a seduction pie,” said stage manager Jovon Shuck, describing the In The Dark Dark Chocolate Pie.

Shuck is responsible for every pie, prop, and actor stage placement, including the trick pies and the fake ones, too.

"There are 60 prop pies backstage, 25 slices of fake pies backstage," said Shuck.

But there is also real pie — at least five real pies for real eating.

Those, however, are not made in the prop stage kitchen. They're made in a backstage traveling kitchen, along with a few that are locally purchased.

Together, these culinary delights are closely guarded. There are multiple signs on the pie containers and the kitchen appliances:

“Props for Show: Don’t Eat.”

“Please Don’t Eat or place items on table: Prop Food Only.”

“Show Food Only.”

"Oftentimes backstage we have cakes and cookies and stuff that we are sharing, so people sometimes assume that our pies in the show are for them,” said Shuck. “So more than once we've come backstage and find a stagehand sitting around eating our prop pie."

"At this point, I've made more fake food than real food in my life," said Ryan G. Dunkin, who plays Cal, the diner's cook, manager, and key holder.

Dunkin spends most of his time in the tiny prop kitchen with fake steaks, pancakes, bacon and now eggs. The eggs used to be real, but they were microwaveable.

“And they smelled bad,” said Dunkin, laughing at his fate in the prop kitchen. And so the eggs became fake.

But I am not sure if I am allowed to tell you which pies on stage are real and which pies are props. See if you can smell out the real ones when you see the show.
