TAMPA, Fla. — Los Chapo's Tacos has built a solid customer base at its brick-and-mortar location on E. 7th St. in Ybor City, beginning with its food truck roots.

"The first six months that we were open with this, it got so crazy over here," said manager Christopher Rodriguez. "We were just getting people from everywhere, and we couldn't handle the capacity of people that were coming to eat here. So, we were forced to open up the restaurant."
Now, more than a year after its food truck hit the road, Los Chapo's may encounter another possible opportunity for growth. It sits across the street from the back of the former Kforce property. Hillsborough County Commissioner and Tampa Sports Authority Board Member Ken Hagan told Spectrum Bay News 9 the site is the main focus of an in-the-works proposal to bring the Tampa Bay Rays to the city full-time.

"We're hoping it does happen because it would change the whole face of Ybor City," Rodriguez said. "It would bring so much more money to Ybor, so much more tourism."
Of course, serving potentially thousands of extra customers would bring changes.
"That would be really challenging for us, to be honest," Rodriguez said. "This is a small restaurant, so that capacity of people, we would probably have to re-strategize the way we pump out tacos here. So, it doesn't worry me at all. It will just mean, honestly, a lot more preparation for us and probably a bigger staff."
While Tampa and Hillsborough County leaders have said a full-season proposal is in the works to bring the team to Tampa, but details are not yet available.
